From November until March, once the fermentation process is complete, cideries, or Sagardotegias, hold an event called Otxotea. The cider makers open up a tap on the barrel, firing cider across the room for you to catch in your glass. This sort of long pour helps aerate the cider, allowing the sediment to blend. A traditional pour is called a txotx, meaning “little.” Only drinking small amounts ensures you’re always drinking it fresh and cold. Ask us for a txotx if you want to drink like you’re in San Sebastian, Txin Txin!
